“Yakimare Ki-ippon” is junmai-shu (Ki-ippon refers to junmaishu brewed at only single brewery) and brewed with only Yamadanishiki (from Hyogo) which is one of the best types of rice for brewing sake. This sake has a mild flavor from Yamadanishiki and a clear aftertaste. In the Edo period, a good sake of Sakuramasamune was branded with a letter of “稀” (“ma-re”, it means “rare”) on the straw package of the cask by a hot iron.
